Chocolate and Raspberry mousse

Ingredients
3 egg whites
75g caster sugar
300ml double cream
150g plain dark chocolate
75g raspberrys
Method
1. Place the chocolate in a heatproof bowl over a pan of hot water, allow to melt slowly, occasionally stirring.
2. Whilst the chocolate is melting, In a bowl separate the egg whites from the yolks. Whip to egg whites using an electrix mixer, and 1 spoonful at a time add in 25g sugar. Whip until the egg whites are stiff.
3. In a separate bowl, whip the double cream until there are stiff peaks.
4. Gently fold the egg whites into the melted chocolate, being careful not to stir to fast as you need to aerate the mixture. Then add in the whipped cream and repeat the process until everything is mixed in.
5. Either by using a spoon or a blender, crush the raspberries until smooth and add in 1-2 spoonful's of sugar. Then mix in the raspberry mixture to the mousse, separate into small bowls and leave to set for at least 4-5 hours.
This recipe is often best made the day before as the mousse needs time to set properly.
