Easy Moroccan Chicken

Super tasty and a great option if you are looking to make a group meal!

Prep time: 10 minutes

Cooking time: 1-2 hours

Serves 4-5


Ingredients

4 chicken thighs

2 red peppers

2 onions

a handful of green beans

2 garlic cloves

5-6 dried apricots

200ml chicken stock

Fresh parsley and coriander chopped

cumin/chilli powder/paprika


Method

1. in a large casserole dish, start to fry the onions and garlic in some olive oil. Add in the sliced red peppers and cook until soft.

2. Add in a teaspoon of each of the spices alon with the chicken thighs, ensure the chicken thighs are covered in the spice mixture. Cook for 10-15 minutes stirring so that the veg does not stick to the pan.

3. Prepare the chicken stock and add it in along with the dried apricots, herbs and some salt and pepper. Leave to simmer for around an hour.

4. After an hour when the stew has reduced down add the green beans and some more water if necessary, leave to cook for another 30 minutes until the chicken is cooked all the way through.

5. When the chicken is cooked, serve the chicken with rice and mango chutney and enjoy!
