Easy Vegetable Soup

Soup is a great lunch option to take on the go and is so easy to make! Step up your game and make your own this week!

Ingredients

1 onion

2 carrots

1 stick of celery

1 potato (optional)

1/2 cup of red lentils

150ml vegetable stock

1 tsp. tomato puree


Method

1. Heat up a pan with some olive oil and start to fry off the onions. When they are soft add the celery and carrots.

2. Once the carrots are softer, add in the potato and lentils and keep stirring so the le tils don't sick to the bottom of the pan.

3. Pour in the vegetable stock, add the tomato puree and leave to simmer on a low heat for 10-15 minutes.

4.Season with salt and pepper, then take off the heat to cool. Once the soup is cool, either eat it as it is or liquidize it so it's smooth.
