Homemade flatbreads with rocket and roasted veg

A quick and simple lunch option that can be made in the morning, try it out with your own choice of fillings and enjoy!

Ingredients

2oz plain flour

3-4 slices of tomato and courgette

A handful of rocket

Olive Oil

Salt and Pepper


Method

1) In a bowl mix the flour, oil, salt, pepper and a splash of water and mix together until it forms a smooth dough.

2) Knead the dough for 4-5 minutes and then roll out into thin, flat circles. Then place in a frying plan without any oil and cook for 4-5 minutes on either side until golden brown.

3) Serve with the roasted veg and rocket and enjoy!
