Weekend cooking tips to prepare for an easier week ahead

Thinking about what to make for breakfast, lunch and dinner everyday can be hard especially when you're short of time and money. Check out these meal prep tips that you can do at the weekend to ensure you have a much easier week ahead and can focus on your studies instead!

1. Roast a chicken on Sunday - So this may seem extravagant especially considering the price of meat in our supermarkets but guess what - a whole chicken can be purchased from Tesco for £3.50. Roasting a chicken for the week ahead is something I do a lot because it means that throughout the week I can make dishes such as risotto, wraps and chicken bakes for lunch and dinner, saving me time and the cost of buying separate packets of chicken every time.


2. Batch cooking - This is something I do a lot, I often make a large batch of soup at the weekend as its something I love to have for my lunch as I can take it on the go! Check out the easy vegetable soup recipe on the blog to make a nutritious and tasty lunch option.


3. Meal planning - it can be difficult even deciding what to make for your meals everyday let alone starting to make them even healthier! IF you create a weekly meal plan at the weekends, you can plan out what you are going to make based on how much time you have each day and make your meals healthier. Trust me, it's so helpful being able to get up in the morning look at the sheet and already have your meal decided for you!


4. Freezer portions! - These can be a lifesaver, there is nothing better than getting in late one evening and having a freshly made meal ready for you to defrost and enjoy! If you like homemade heaty meals like shepherd pie, Bolognese or simply just freshly made tomato sauce, it will make your life so much easier if you try this out!
